A Lunar New Year feast is not complete without the crunch of a leafy green vegetable. Leafy greens like bok choy, cabbage, and lettuce are eaten during the new year as they symbolise luck, renewal, and good fortune. These lucky greens are treasured and often enshrined as ornamental jade sculptures on Chinese wooden display stands. They are also part of the ritual of being devoured by lions during lion dances.
